Ice Cream Cookies

Method

1. Mix ice cream and 1/2 cup nuts in airtight container. Freeze 20 to 30 min. or until firm enough to hold its shape.
2. Spoon about 2 Tbsp. ice cream mixture onto flat side of each of 15 cookies; cover each with second cookie, top-side up, to make sandwich.
3. Roll edges in remaining nuts. Freeze 2 hours or until firm.

Halo Halo

1. In a serving glass, layer sweet red bean, sweet white beans, coconut gel, macapuno, and jackfruit.
2. Top with shaved ice.
3. Drizzle about one tablespoon of evaporated milk over shaved ice.
4. Top with a scoop of ice cream.
5. Enjoy immediately
